Bureau of Milk Control, in which event such term shall mean
and refer to the duly constituted department of health of such
city or town, or the accredited representative of such depart-
ment.

G. "University of Maryland" shall mean and refer not only
to the said University, but to any college, school, division,
bureau, or agency of said University to which the said Uni-
versity shall delegate any of the powers or duties conferred or
imposed upon it by this Act.

H. "Person" shall mean and include natural person, firm,
corporation or association; and the singular shall include the
plural, and the plural shall include the singular.

I. "Milk", wherever used herein, shall refer only to milk
which is intended for sale for human consumption. "Milk" on
the dairy farm, or in the possession of the producer or his
agent and until it reaches the processor or distributor, shall
mean and include only such as is the whole, unadjusted,
unaltered, unadulterated lacteal secretion produced by the
complete milking of a healthy bovine animal and which contains
no appreciable quantity of colostrum. "Milk", when processed
or offered for sale by a processor or distributor, shall mean
and include the unadulterated lacteal secretion produced by
the complete milking of a healthy bovine animal which con-
tains no appreciable quantity of colostrum and not less than
12% of milk solids of which not less than 3. 5% is milk fat.

Wherever the health authority permits the sale for human
consumption of the lacteal secretion of any other animal, the
term "Milk" shall also refer to such lacteal secretion except
where such inclusion would be irrelevant or inconsistent with
the context of the term.

J. "Milk Products" shall mean and include all milk and
skimmed milk beverages, cream, sour cream, skimmed milk,
buttermilk, vitamin D milk, homogenized milk, condensed or
evaporated milk or skimmed milk (not packaged in hermetic-
ally sealed containers), and all other products of milk in-
tended for human consumption except those within the cover-
age of this Article 43 relating to frozen such products.

K. "Adulteration" as applied to milk, cream or sour cream
shall mean and indicate that water or any substance foreign
to milk, other than a vitamin content approved by the health
authority, has been added to or mixed with such milk or
cream, or that such milk or cream does not conform to the
appropriate definition thereof. As applied to a milk product,
other than cream or sour cream, adulteration shall mean and
indicate that the product contains an unwholesome foreign
substance, or that it does not conform to the definition of the
product if that product be herein defined.
