L. "Unwholesome" shall mean and indicate a substance, the
human consumption of which is liable to introduce, cause or
increase sickness, or impair or derange body functions, or
otherwise be injurious to health.

M. "Cream" shall mean that portion of milk which contains
not less than 18% milk fat.

N. "Sour Cream" shall mean cream, the acidity of which is
more than 0. 20%, expressed as lactic acid.

O. "Buttermilk" shall mean the product resulting from
churning milk or cream, or from the souring or treatment, by
a lactic acid or other culture, of milk, skimmed milk, con-
densed or evaporated milk or condensed or evaporated skim-
med milk, or milk or skimmed milk powder.

P. "Vitamin D Milk" is milk, the Vitamin D content of
which has been artificially increased by a method and in an
amount approved by the health authority.

Q. "Homogenized Milk" is milk which has been so treated
as to break up the fat globules thereof to such an extent that
after 48 hours storage, no visible cream separation occurs on
the milk, and the fat percentage of the top 100 ee. of milk in a
quart container, or of like proportionate volumes in containers
of other sizes, does not differ by more than 5% of itself from
the fat percentage of the remaining milk determined after
thorough mixing.

R. "Pasteurization" shall mean the process of heating every
particle of milk or milk product to at least 143° F., and
holding at such temperature continuously for at least 30
minutes, or to at least 160° F., and holding at such tem-
perature for at least 15 seconds, in either case the heating to
to be in approved and properly operated equipment; and
"Pasteurized" shall refer to milk or milk products when so
processed; provided that nothing contained herein shall be
construed as excluding any other process which is acceptably
demonstrated to be equally efficient and is approved by the
health authority.

S. "Milk Fat" or "Butter Fat" refers only to natural milk
fat.

T. "Dipped" shall apply only to pasteurized milk or pasteur-
ized milk products, intended for sale for human consumption,
which has been placed in the container for delivery to the
customer by dipping, pouring by hand or by any method other
than a mechanical filler approved by the health authority.

U. "Dairy" or "Dairy Farm" is any place where milk is
produced.

V. "Milk Plant" is any place or establishment (other than
a dairy farm, unless it is operated by a producer-distributor)
where milk is collected, processed, stored, bottled, pasteurized,
or otherwise prepared for sale or distribution.
