S. Sanitization. The application of any effective method or sub-
stance to a clean surface for the destruction of pathogens, and of
other organisms as far as is practicable. Such treatment shall not
adversely affect the equipment, the milk product or the health of
consumers, and shall be acceptable to the Secretary.
T. Official Laboratory. An official laboratory is a biological, chemi-
cal, or physical laboratory which is under the direct supervision of
the Secretary.
U. Officially Designated Laboratory. An officially designated labo-
ratory is a commercial laboratory authorized by the Secretary to do
official work, or a milk industry laboratory officially designated by
the Secretary for the examination of producer samples of milk for
pasteurization.
V. Milk, where used herein, shall refer only to milk which is in-
tended for sale for human consumption. "Milk" on the dairy farm,
or in the possession of the producer or his agent, and until it reaches
the processor or distributor, shall mean and include only such as is
the whole, unadjusted, unaltered, unadulterated, lacteal secretion ob-
tained by the complete milking of one or more healthy animals and
which contains no appreciable quantity of colostrum. "Milk" when
processed or offered for sale by a processor or distributor shall mean
and include the unadulterated lacteal secretion which contains not
less than 8.25 percent milk solids-not-fat and not less than 3.50 per-
cent butterfat. Milk fat or butterfat refers only to the natural fat
of milk.
W. Goat Milk. The lacteal secretion, practically free from colos-
trum, obtained by the complete milking of healthy goats. The word
"milk" shall be interpreted to include goat milk.
X. Cream. The sweet, fatty liquid separated from milk, with or
without optional ingredients, which contains not less than 18 per-
cent milk fat.
Y. Milk Products. Milk products shall mean and include milk,
cream, and all other such products as may be designated by the
Secretary.
571. Sale of Adulterated, Misbranded or Improperly Labeled Milk
Products Prohibited.
No person shall produce, process, store for sale, have in possession
with intent to sell, offer or expose for sale, sell or give away any
milk product which is adulterated, misbranded, or which, if defined
in this subtitle, does not conform to such definition, or which was pro-
duced, collected, transported, pasteurized, packaged, dispensed or
served in violation of any of the provisions of this subtitle, or any
rule or regulation made and promulgated thereunder. The posses-
sion of any such milk products, elsewhere than in a private home,
by any person holding a permit or by any public establishment, un-
der this subtitle shall be presumptive evidence of an intent to sell
or dispose of such milk products for human consumption.
Any adulterated, misbranded, or improperly labeled milk products
may be impounded by the Secretary and disposed of in accordance
with the Health Laws of Maryland.
