VEGETABLES.
The principal vegetable products are: asparagus, lettuce,
beets, peas, beans, squashes, cucumbers, cabbage, Irish pota-
toes, tomatoes, corn, Lima beans, sweet potatoes, egg-plants,
cantaloups and water-mellons, turnips and carrots, and they
are generally ready for consumption in the order in which
they are named: the eight first named in the month of June,
the three next in July, the three next in August and the last
named in the fall of the year. The exact date of their yearly
ripening cannot be stated with accuracy, as they are wholly
dependent upon the weather. The crops of all of them are
sure, and they are always in the market at least ten days be-
