VESSELS WHICH NORMALLY ACCOMPANY THE MUSCLE TISSUE AND
WHICH ARE NOT SEPARATED FROM IT IN THE PROCESS OF
DRESSING. IT DOES NOT INCLUDE THE MUSCLE FOUND IN THE
LIPS, SNOUT, OR EARS.
REVISOR'S NOTE: This subsection presently appears
as Art. 66C, §470C(j) of the Code. The
present reference to "cattle, sheep, swine,
or goats" and the last sentence are
proposed for deletion and a reference to
"livestock" is added to the first sentence.
According to the Department, the last
sentence is intended to provide that any
reference to meat also includes equine
meat. The reference to equine meat was set
apart from the general definition in an
attempt to indicate that equines may not be
prepared in any establishment preparing or
slaughtering cattle, sheep, swine, or
goats. Sec. 4—114, however, provides for
separate slaughter or preparation of
equines and, consequently, the last
sentence of Art. 66C, §470c(j) is
unnecessary. Sec. 1—101(e) defines
"livestock" as "cattle, equines, goats,
sheep, and swine". The only other changes
made are in style.
(M) "MEAT BROKER" MEANS ANY PERSON ENGAGED IN
THE BUSINESS OF BUYING OR SELLING LIVESTOCK CARCASSES,
PARTS OF THEM, OR MEAT FOOD PRODUCTS, ON COMMISSION,
OR NEGOTIATING PURCHASES OR SALES OF THESE ARTICLES,
OTHER THAN FOR HIS OWN ACCOUNT OR AS AN EMPLOYEE OF
ANOTHER PERSON.

(N) "MEAT BY-PRODUCT" MEANS ANY EDIBLE PART OTHER
THAN MEAT WHICH HAS BEEN DERIVED FROM LIVESTOCK.
